Details:

Sodium cyclamate (sweetener code 952) is an artificial and non-nutritive synthetic sweetener. It is 30–50 times sweeter than sucrose (table sugar), making it the least potent of the commercially used artificial sweeteners. It is odorless, stable to heat, light and air. It is often used with other artificial sweeteners, especially saccharin; the mixture of 10 parts cyclamate to 1 part saccharin is common and masks the off-tastes of both sweeteners. It is less expensive than most sweeteners, including sucralose, and is stable under heating. Sodium Cyclamate is white needle or flaky crystal or crystalline powder.

It is tolerant to alkalinity but slightly tolerant to acidity. It produces pure sweetness without bitter taste.

Cyclamate is the sodium or calcium salt of cyclamic acid (cyclohexanesulfamic acid), which itself is prepared by the sulfonation of cyclohexylamine. This can be accomplished by reacting cyclohexylamine with either sulfamic acid or sulfur trioxide.

Application:

It belongs to the nutritional synthetic sweeteners.  It is widely used in different foods and is suitable for diabetic and obese patients.

Having a pure sweet taste, Sodium Cyclamate is the artificial sweetener and is 30 times as saccharoses.

Firstly, it can be widely used in food manufacturing industry without change the flavor of food, such as pickles, seasoning sauce, cakes, biscuits, bread, ice cream, frozen sucker, popsicles, drinks and so on, with a maximum amount of 0.65g/kg. It can be used in confect, with a maximum amount of 1.0g/kg, and also can be used in orange peel, preserved plum, dried arbutus and so on, with the largest amount of 8.0g/kg.

Secondly, it can be used in daily chemical industry, such as cosmetics and toothpaste.

Thirdly, it can be used in family condiment, such as cooking.

Fourthly, it can be used as sugar-substitutes for obese patients and diabetics.

Fifthly, it can be made as packets to take the place of sugar and widely used in hotels, travel and family life.

Sixthly, it can be used in the pharmaceutical industry for sugar-coating and syrup.

The main role in food and beverage displays in these aspects: providing sweet taste, tastes like sugar; reducing energy by about 95%; enhancing food flavor and prolong the residence time of taste, especially for fruit scent flavor; avoiding dilution of nutrient and maintain nutritive value of food; and can be cooperatively used with sugar and other synthetic sweeteners.
